Herb Seared Tuna Salad
Ingredients
4 oz
Yellowfin Tuna steak
1/4 oz
olive oil
1 tsp
fresh herbs chopped
salt & pepper
1 oz
Arugula
1 oz
pea shoots
3 ea
cherry tomatoes cut in halves
1/2 tsp
capers
6 ea
Castelvetrano olives
1 oz
roasted golden beets
2 oz
lemon dressing

Instructions

Season the tuna with oil, fresh chopped herbs and S/P.

Sear in a hot skillet for 2 minutes on each side – allow tuna to cool.

Combine remaining ingredients in a mixing bowl – toss well.

Portion the salad in the center of a cold plate.

Slice the tuna on a slight bias ½” thick.

Fan the tuna over the salad and serve.
