Fresh Herb Marinate Pompano
Ingredients
- 4 oz olive oil
- 2 oz mixed fresh herbs fine chopped
- juice of 1 lemon
- 2 6 oz portions Pompano filet
- 12 oz cooked orzo pasta (6 oz dry)
- 2 oz oven roasted tomatoes
- 1 oz pine nuts toasted
- 2 oz lemon dressing

Instructions
- Mix the first 3 ingredients in a bowl, dredge the fish in the marinade on both sides.
- Place the herb coated fish on a non-stick sheet pan and bake in a 400 degree oven for 16-18 minutes.
- Combine the last 4 ingredients in a mixing bowl, mix well and place on a serving dish.
- With a spatula, transfer the cooked fish over the orzo salad.
