Fresh Herb Marinate Pompano, Oven Roasted & Served over Orzo Pasta Salad
mixed fresh herbs
juice of 1 lemon
portions Pompano filet
cooked orzo pasta
(6 oz dry)
oven roasted tomatoes
Mix the first 3 ingredients in a bowl, dredge the fish in the marinade on both sides.
Place the herb coated fish on a non-stick sheet pan and bake in a 400 degree oven for 16-18 minutes.
Combine the last 4 ingredients in a mixing bowl, mix well and place on a serving dish.
With a spatula, transfer the cooked fish over the orzo salad.
