Grilled Snapper
Ingredients
- 2 6 oz Snapper filets
- salt & pepper
- 1 tbsp olive oil
- 1 ea Heirloom tomato diced
- 2 ea shallots sliced thin
- 3 ea bell peppers: red, yellow, green diced
- 1 cup black olives sliced
- 1 ea lemon juiced
- 2 tbsp Italian parsley chopped
- 4 oz XVOO
Servings: portions
Instructions
- Season the snapper filets with S/P and olive oil on both sides.
- Place on a hot clean grill for 4-5 minutes on each side.
- Combine the remaining ingredients in a mixing bowl and stir – allow to sit for 1 hour minimum.
- Place the grilled snapper filets on a platter and top with the Salsa Fresca.
