Pan Seared Grouper
Ingredients
- 2 6 oz portions Grouper
- 4 tbsp olive oil
- salt & pepper to taste
- 2 cloves garlic
- 1 small Spanish onion fine diced
- 1 ea anchovies
- 1 tbsp capers chopped
- 1/4 cup black olives sliced
- 1-2 pinch chili flakes
- 1-2 pinch dry oregano
- 2 oz white wine
- 8 cups plum tomatoes canned
- 2 tbsp Italian parsley chopped
- Garlic Mashed Potatoes

Instructions
- Season the grouper filets with S/P.
- Add 2 TBSP olive oil to a non-stick fry pan on medium flame. Add the fish and cook 5-6 minutes on each side.
- Meanwhile in a sauce pot make the Putanesca sauce with the ingredients listed (except the GMP).
- Serve by placing the garlic mashed potatoes in the center of the plate, fish on top and the putanesca sauce around the potatoes.
