Pan Seared Pompano
Ingredients
- 2 6 oz portions Pompano
- salt & pepper
- 2 tbsp olive oil
- 2 oz Tuaca liquor
- 4 oz vegetable broth
- 3-4 leaves fresh basil julienne
- 1 oz whole butter
- 8 oz roasted new potatoes
Servings: portions
Instructions
- Season fish with salt/pepper, add oil to a non-stick fry pan on a medium flame.
- Add the fish and cook 3-4 minutes on each side.
- Add the next 3 ingredients in order – reduce liquid by half.
- Turn off the flame and add the whole butter – stir.
- Serve with roasted new potatoes.
