Thaw Frozen Tuna

Important: You must remove fish from the vacuum package before thawing out. Do not freeze fish once it has been thawed.

Properly thawing frozen tuna is important to preserve the quality and color of the fish, as well as to keep the fish safe to eat. Here is a guideline of acceptable thawing methods for tuna steaks and Saku blocks.

  1. Remove tuna from the vacuum package or puncture pouch to allow oxygen flow.
  2. Place tuna on a sheet pan lined with parchment paper and cover with plastic wrap.
  3. Place in the refrigerator at a temperature below 40°F until thawed completely.

  2. Place the portions into a sealed container or bag.
  3. Place the container with fish under cold running water.
  4. Check every 30 minutes until thawed completely.
  5. Prepare and serve fish immediately after thawing.
